Job Summary

The Chief Steward is responsible for managing the stewarding department, ensuring cleanliness, hygiene, and efficient operation of all kitchen and food service areas. This role oversees dishwashing operations, kitchen sanitation, and stewarding staff while ensuring compliance with hygiene standards (including Halal and food safety requirements).

Key Responsibilities

1. Stewarding Operations Management

  • Oversee daily stewarding operations (dishwashing, cleaning, waste disposal).

  • Ensure all kitchen equipment, utensils, and areas are clean and sanitized.

  • Maintain smooth workflow between kitchen and stewarding team.

2. Hygiene & Sanitation Control

  • Ensure compliance with food safety and hygiene standards (HACCP & Halal).

  • Maintain cleanliness of:

    • Kitchen floors, walls, and drains

    • Cold rooms, storage areas, and waste zones

  • Implement pest control and cleanliness schedules.

3. Team Leadership & Supervision

  • Supervise and manage stewarding staff (shift planning, attendance, discipline).

  • Train staff on proper cleaning procedures and safety practices.

  • Ensure teamwork and efficiency within the department.

4. Equipment & Inventory Management

  • Monitor stock of cleaning chemicals, utensils, and stewarding supplies.

  • Ensure proper use and storage of equipment.

  • Report damages and coordinate repairs or replacements.

5. Waste Management

  • Ensure proper segregation and disposal of waste.

  • Maintain cleanliness in garbage holding areas.

  • Monitor recycling and sustainability practices.

6. Cost Control

  • Control breakage, loss, and wastage of kitchen equipment.

  • Optimize use of cleaning supplies and manpower.

  • Maintain cost efficiency within the department.

7. Coordination with Other Departments

  • Work closely with:

    • Kitchen (Chef & team)

    • F&B Service team

    • Purchasing department

  • Ensure timely availability of clean utensils during operations.

8. Safety Compliance

  • Ensure safe handling of chemicals and equipment.

  • Enforce workplace safety procedures to avoid accidents.

  • Conduct regular safety checks.
