Job Description

To oversee and ensure compliance with hygiene, food safety, sanitation, and Halal assurance requirements throughout the hotel. The role is responsible for maintaining regulatory compliance, implementing hygiene standards, supporting Halal certification requirements, conducting audits, and promoting food safety culture across all departments.

Key Responsibilities

Hygiene & Food Safety Management

  • Monitor and ensure compliance with food safety, hygiene, and sanitation standards in all food preparation, storage, and service areas.
  • Conduct routine inspections and audits of kitchens, restaurants, staff cafeterias, receiving areas, and food storage facilities.
  • Ensure compliance with HACCP, GMP, and relevant food safety regulations.
  • Investigate hygiene-related incidents and implement corrective and preventive actions.
  • Coordinate pest control programs and monitor service providers' performance.
  • Maintain hygiene documentation, records, and reports.

Halal Assurance Management

  • Ensure the hotel's Halal Assurance System (HAS) is implemented and maintained in accordance with certification requirements.
  • Monitor compliance with Halal standards across food production, storage, procurement, and service operations.
  • Verify Halal status of ingredients, suppliers, and products used within the hotel.
  • Coordinate Halal audits, inspections, and certification renewals.
  • Liaise with relevant authorities and certification bodies regarding Halal compliance matters.
  • Ensure proper segregation and handling of Halal and non-Halal products where applicable.

Training & Awareness

  • Conduct hygiene, food safety, and Halal awareness training for employees.
  • Support departmental managers in implementing hygiene and food safety best practices.
  • Promote a culture of food safety and continuous improvement throughout the organization.
  • Develop training materials and conduct refresher sessions as required.

Audit & Compliance

  • Prepare for internal, external, and regulatory audits.
  • Conduct risk assessments and identify areas for improvement.
  • Monitor corrective action plans and ensure timely closure of audit findings.
  • Ensure compliance with local health regulations and company standards.

Reporting & Administration

  • Prepare monthly hygiene and Halal compliance reports.
  • Maintain records of inspections, audits, training, pest control activities, and corrective actions.
  • Track hygiene-related KPIs and recommend improvement initiatives.
  • Manage departmental budgets related to hygiene and food safety programs.

Requirements

Education

  • Bachelor's Degree or Diploma in Food Science, Food Technology, Nutrition, Hospitality Management, Environmental Health, or related field.

Experience

  • Minimum 3–5 years of experience in Food Safety, Hygiene, Quality Assurance, or Halal Assurance within hospitality, food manufacturing, or food service operations.
  • Experience handling Halal certification processes and audits is preferred.

Knowledge & Skills

  • Strong knowledge of HACCP, GMP, Food Safety Management Systems, and Halal standards.
  • Familiarity with local food safety regulations and Halal certification requirements.
  • Excellent auditing, analytical, and problem-solving skills.
  • Strong communication and training facilitation abilities.
  • Proficient in Microsoft Office applications and report preparation.
